Ingredients
Scale
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar (for crust)
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 teaspoon lemon juice
1 cup fresh raspberries (for filling)
1/2 cup fresh raspberries (for topping)
Instructions
Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a bowl. Mix until the crumbs are evenly moistened.
Press the crumb mixture firmly into the bottom of 6 small serving cups or ramekins. Place cups in the refrigerator while you prepare the filling.
In a large bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Fold in 1 cup of fresh raspberries and the lemon juice into the cheesecake batter. Be gentle to keep the mixture light.
Spoon or pipe the cheesecake filling evenly over the crusts in the prepared cups.
Chill the cups in the refrigerator for at least 4 hours, or until firm.
Before serving, top each cup with the remaining 1/2 cup of fresh raspberries.
Notes
If you prefer a sweeter crust, increase the crust sugar to 6 tablespoons.
Make sure your cream cheese is truly at room temperature for a smooth filling.
This dessert sets well due to the heavy cream content, eliminating the need for gelatin.
