Ingredients
Scale
1 1/2 cups chocolate wafer cookie crumbs
1/4 cup unsalted butter, melted
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, cold
1 cup Nutella (or chocolate-hazelnut spread)
1/2 cup heavy whipping cream, cold (for topping)
2 tablespoons chopped hazelnuts (for garnish)
Instructions
Mix the chocolate wafer crumbs and melted butter together in a bowl. Press this mixture firmly into the bottom and up the sides of a 9-inch pie plate. Chill the crust for 30 minutes.
In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, beating until light and fluffy.
In a separate bowl, whip the 1 cup of cold heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Fold in the Nutella until just combined, being careful not to deflate the mixture too much.
Pour the filling into the chilled crust and spread evenly. Refrigerate for at least 6 hours, or preferably overnight, to set for clean slicing.
Before serving, whip the remaining 1/2 cup of heavy cream to soft peaks. Spread or pipe this onto the top of the pie.
Sprinkle with chopped hazelnuts. Slice and enjoy the memory!
Notes
Use a food processor to make fine, even cookie crumbs for the best crust texture.
Make sure your cream cheese is truly at room temperature for a smooth filling.
Chilling time is crucial for achieving those perfect, clean slices Richard loves.
