Capture the bright, sunny taste of the tropics with this easy No Bake Mango Cheesecake. It sets beautifully for a smooth, creamy texture that tastes just like a vacation. Richard loves this one because the mango reminds him of that trip to Southeast Asia.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup mango puree (fresh or thawed frozen)
  • 1 packet (0.25 oz) unflavored gelatin
  • 1/4 cup cold water
  • Optional: Extra mango slices for topping

Instructions

  1. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan. Chill while you prepare the filling.
  2. In a medium bowl, beat the softened cream cheese until smooth. Add 1 cup of sugar and vanilla extract, mixing until fully combined.
  3. In a separate small bowl, sprinkle gelatin over cold water. Let it sit for 5 minutes to bloom.
  4. Gently heat the bloomed gelatin mixture until the gelatin is completely dissolved. Do not boil.
  5. Slowly pour the dissolved gelatin into the cream cheese mixture while mixing on low speed.
  6. In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  7. Fold in the mango puree until you have an even, pale orange color.
  8. Pour the filling over the chilled crust. Cover the pan loosely with plastic wrap.
  9. Refrigerate for at least 6 hours, or preferably overnight, until the cheesecake is firm.
  10. Before serving, carefully release the springform side. Top with fresh mango slices if desired.

Notes

  • Use very ripe, sweet mangoes for the best flavor.
  • For a quicker set, you can use a pre-made graham cracker crust.
  • If you prefer a firmer set, slightly increase the gelatin amount, but be careful not to add too much or the texture will suffer.
