Make these easy, chewy bars that combine bright lemon zest and juice with sweet dates and crunchy almonds without turning on your oven.

Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup packed Medjool dates, pitted
  • 1/2 cup rolled oats (ensure gluten-free if needed)
  • 1/4 cup fresh lemon juice
  • Zest of 1 large lemon
  • 1 tablespoon coconut oil, melted
  • 1/4 teaspoon sea salt

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Place the almonds in a food processor and pulse until they form a coarse, slightly sticky meal. Do not over-process into butter.
  3. Add the pitted dates, rolled oats, lemon juice, lemon zest, melted coconut oil, and salt to the food processor.
  4. Process the mixture until it comes together into a thick, uniform dough that sticks when pressed between your fingers. You may need to stop and scrape down the sides.
  5. Transfer the dough mixture to the prepared pan. Press the mixture down firmly and evenly into the bottom of the pan using the back of a spoon or your fingers.
  6. Place the pan in the refrigerator and chill for at least 2 hours, or until the bars are firm enough to cut cleanly.
  7. Use the parchment paper overhang to lift the slab out of the pan. Cut into 12 or 16 bars.

Notes

  • For a stronger lemon flavor, you can add 1 teaspoon of pure lemon extract along with the juice.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • If your dates are dry, soak them in hot water for 10 minutes, drain well, and pat dry before using.
