Ingredients
Scale
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
1 cup sweetened condensed milk
1/2 cup cream cheese, softened
1/4 cup fresh lime juice
1 tablespoon lime zest
1 teaspoon coconut extract
1 cup shredded coconut, plus extra for topping
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a medium bowl. Press this mixture firmly and evenly into the bottom of the prepared pan to form the crust.
In a separate bowl, beat the softened cream cheese until smooth.
Add the sweetened condensed milk, lime juice, lime zest, and coconut extract to the cream cheese. Beat until the mixture is fully combined and smooth.
Stir in 1 cup of shredded coconut until evenly distributed throughout the filling.
Pour the filling over the prepared crust and spread it into an even layer.
Sprinkle the top with extra shredded coconut.
Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, or until the bars are firm.
Use the parchment paper overhang to lift the bars from the pan. Cut into squares before serving.
Notes
For a tangier flavor, substitute half of the sweetened condensed milk with full-fat coconut cream.
If you prefer a firmer crust, chill the crust layer for 15 minutes before adding the filling.
You can substitute the graham cracker crumbs with vanilla wafer crumbs for a different base flavor.
