Ingredients
Scale
1 1/2 cups chocolate wafer cookie crumbs
1/4 cup melted butter
16 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream, cold
1/2 cup unsweetened cocoa powder
4 ounces semi-sweet chocolate, melted and cooled slightly
Instructions
Mix the chocolate wafer crumbs and melted butter together. Press this mixture firmly into the bottom of a 9-inch springform pan. Chill the crust while you prepare the filling.
In a large bowl, beat the softened cream cheese until it is smooth. You want no lumps remaining.
Gradually add the powdered sugar and vanilla extract to the cream cheese. Mix until just combined.
In a separate bowl, whip the cold heavy cream until stiff peaks form. Set this aside.
Gently fold the cocoa powder into the cream cheese mixture until it is evenly incorporated.
Fold the melted chocolate into the cocoa-cream cheese mixture. Mix until the color is uniform.
Carefully fold the whipped cream into the chocolate mixture in two additions. Work gently to keep the mixture light.
Pour the filling over the chilled crust. Spread the top evenly.
Refrigerate the cheesecake for at least 6 hours, or preferably overnight, until it sets firm enough to slice cleanly.
Before serving, release the springform side. Enjoy this taste of memory.
Notes
Use high-quality chocolate for the best flavor in your cheesecake.
Make sure your cream cheese is truly at room temperature for smooth mixing.
