Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup fresh blueberries (for batter)
  • 1 cup fresh blueberries (for topping)
  • 1 tablespoon lemon juice (for topping)

Instructions

  1. Mix graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and stir until crumbs are evenly moistened.
  2. Press the crumb mixture firmly into the bottoms of 6 small serving cups or ramekins. Place cups in the refrigerator to chill while preparing the filling.
  3. In a large bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract. Mix until fully combined.
  4. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until just combined. Fold in the 1/2 cup of blueberries reserved for the batter.
  6. Spoon or pipe the cheesecake filling evenly over the chilled crusts in the cups.
  7. Refrigerate the cups for at least 4 hours, or until firm.
  8. For the topping, gently toss the remaining 1 cup of blueberries with lemon juice.
  9. Top each chilled cheesecake cup with the lemon-blueberry mixture just before serving.

Notes

  • Make sure your cream cheese is truly at room temperature for a smooth filling.
  • For a deeper flavor, toast the graham cracker crumbs lightly before mixing with butter.
  • If you prefer a slightly tangier crust, substitute 2 tablespoons of the butter with melted coconut oil.
