Enjoy this simple, country-style side dish featuring tender new potatoes and green beans simmered with savory ham. It is a comforting, easy meal that brings back warm memories.

Ingredients

Scale
  • 1 pound new potatoes, halved or quartered if large
  • 1 pound fresh green beans, trimmed
  • 4 ounces fully cooked ham, diced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the potatoes into a large pot or Dutch oven. Add enough water to cover them by one inch. Bring to a boil, then reduce heat and simmer for 10 minutes.
  2. Drain the potatoes well. Return them to the pot.
  3. Add the trimmed green beans, diced ham, broth, butter, salt, and pepper to the pot with the potatoes.
  4. Bring the mixture to a simmer over medium heat.
  5. Reduce the heat to low, cover the pot, and cook for 15 to 20 minutes. Cook until the potatoes are fork-tender and the green beans are tender-crisp.
  6. Remove the lid for the last 5 minutes of cooking if you prefer less liquid.
  7. Taste and adjust seasoning if needed before serving warm.
