Create high protein breakfast egg muffin cups that are perfect for meal prep. These oven baked egg bites stay fluffy using a water bath method and freeze well for quick reheating.

Ingredients

Scale
  • 12 large eggs
  • 1/2 cup milk (any kind)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked, chopped protein (like ham or sausage)
  • 1/2 cup shredded cheese (like cheddar or Monterey Jack)
  • 1/2 cup chopped vegetables (like spinach or bell peppers)

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or line it with silicone muffin pan liners.
  2. In a large bowl, whisk the eggs, milk, salt, and pepper together until they are well combined and slightly frothy. You want a good mix for fluffy interiors.
  3. Distribute your chopped protein, cheese, and vegetables evenly among the prepared muffin cups. Do not overfill; aim for about one-third full.
  4. Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
  5. To create a steam bath for tender egg bites, place the muffin tin inside a larger baking pan. Pour hot water into the larger pan, reaching about halfway up the sides of the muffin tin. This water bath prevents rubbery texture.
  6. Bake for 20 to 25 minutes, or until the egg bites are set in the center. A knife inserted near the center should come out clean.
  7. Remove the muffin tin from the water bath and let the egg muffin cups cool in the tin for 5 minutes before removing them.

Notes

  • For freezing breakfast: Let the egg bites cool completely. Place them on a baking sheet to freeze solid, then transfer them to an airtight freezer bag. They keep well for up to one month.
  • To reheat egg muffins from frozen: Microwave one or two bites for 60 to 90 seconds, or until heated through.
  • If you prefer a quicker bake without the water bath, increase the oven temperature to 350 degrees Fahrenheit, but watch closely as they may become slightly less tender.
  • These are great keto egg bites when you skip starchy vegetables.
