Ingredients
Scale
6 large eggs
1/4 cup milk (any kind)
1 cup chopped cooked lean meat (like ham or turkey)
1/2 cup shredded cheese (cheddar or mozzarella)
1/4 cup chopped bell peppers
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin.
In a medium bowl, whisk the eggs and milk together until they are well combined. Season with salt and pepper.
Divide the chopped meat, cheese, and bell peppers evenly among the prepared muffin cups.
Pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
Bake for 15 to 18 minutes, or until the egg is set and the tops are lightly golden.
Let the muffins cool in the tin for a few minutes before carefully removing them.
Store cooled muffins in an airtight container in the refrigerator for easy meal prep.
Notes
Using milk helps keep the muffins tender.
Do not over-fill the muffin cups; leave space for the eggs to rise slightly.
You can substitute vegetables like spinach or mushrooms for variety.
For extra moisture control, a tiny dash of cream cheese mixed with the eggs works wonders.
