Make soft, chewy caramels quickly right in your microwave. This simple method brings back sweet memories without the fuss of stovetop cooking.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Lightly grease an 8×8 inch pan or line it with parchment paper.
  2. Combine sugar and corn syrup in a large, microwave-safe glass bowl.
  3. Microwave on high for 3 minutes. Stir well.
  4. Microwave for another 2 minutes. Stir again.
  5. Microwave for a final 1 to 2 minutes until the mixture reaches a light amber color. Watch closely; it burns fast.
  6. Carefully stir in the heavy cream, butter, salt, and vanilla extract. The mixture will bubble vigorously.
  7. Return the bowl to the microwave and cook for 1 minute. Stir well.
  8. Pour the hot mixture into your prepared pan.
  9. Let the caramels cool completely at room temperature for at least 2 hours until firm.
  10. Cut into squares.

Notes

  • Always use a glass bowl when microwaving sugar mixtures.
  • Microwave times vary; watch the color closely during the cooking stages.
  • If the mixture cools before you pour, gently reheat for 30 seconds to make it pourable.
