This recipe delivers incredibly tender, juicy chicken breasts that truly melt in your mouth. We use a special technique to keep these simple baked breasts moist and flavorful, recalling a simple, perfect meal from our travels.

Ingredients

Scale
  • 4 Boneless, skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
  • 1/4 cup Chicken broth
  • 2 tablespoons Butter, cut into small pieces

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts completely dry with paper towels. This step helps create a better surface.
  3. In a small bowl, mix the salt, pepper, and garlic powder. Rub this mixture evenly over both sides of the chicken breasts.
  4. Place the seasoned chicken breasts in a baking dish.
  5. Pour the chicken broth into the bottom of the baking dish around the chicken, but not directly over the tops.
  6. Dot the tops of the chicken breasts with the small pieces of butter.
  7. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove the dish from the oven and let the chicken rest in the pan for 5 minutes before serving. The resting juices keep the meat tender.

Notes

  • For extra moisture, you can wrap the chicken loosely in foil before baking.
  • Richard remembers a similar simple preparation from a small trattoria in Tuscany.
  • Baking time changes based on the thickness of your chicken breasts. Use a meat thermometer for accuracy.
