This easy pork marinade, inspired by bright flavors from our travels, packs a punch into your pork chops. It works well for grilling or baking.

Ingredients

Scale
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 bone-in pork chops (about 1 inch thick)

Instructions

  1. In a medium bowl, whisk together the lime juice, olive oil, minced garlic, Dijon mustard, oregano, salt, and pepper to create the citrus garlic pork chop marinade.
  2. Place the pork chops in a large zip-top bag or shallow dish. Pour the marinade over the chops, ensuring they are fully coated.
  3. Seal the bag or cover the dish. Refrigerate for at least 2 hours, or up to 8 hours for the best flavor. An overnight pork marinade works well if you prefer a deeper taste.
  4. Remove the pork chops from the marinade, letting excess drip off. Discard the remaining marinade.
  5. Cook the pork chops using your preferred method (grill or oven) until the internal temperature reaches 145 degrees Fahrenheit.

Notes

  • For a low-sodium hack, reduce the added salt to 1/4 teaspoon and use fresh herbs instead of dried oregano.
  • This marinade is excellent for grilling. Preheat your grill to medium-high heat.
  • If baking, place chops on a rack set over a baking sheet and bake at 400 degrees Fahrenheit for 20-25 minutes.
