You will love this fresh, chunky mango salsa. It balances sweet mango with zesty lime, sharp onion, fresh cilantro, and a kick of jalapeño. This salsa brings back sunny memories of street carts and tropical flavors. Serve it with chips or spoon it over fish or tacos.

Ingredients

Scale
  • 2 ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (adjust to your spice preference)
  • Juice of 2 limes
  • 1/4 teaspoon salt (or to taste)

Instructions

  1. Prepare all your ingredients. Dice the mangoes, finely chop the red onion, chop the cilantro, and mince the jalapeño.
  2. In a medium bowl, gently combine the diced mangoes, red onion, cilantro, and minced jalapeño.
  3. Pour the fresh lime juice over the mixture.
  4. Sprinkle with salt.
  5. Gently toss everything together until well mixed. Be careful not to mash the mango.
  6. Taste the salsa. Add more salt or lime juice if needed.
  7. Let the salsa rest for at least 15 minutes before serving. This allows the flavors to marry.

Notes

  • For the best flavor, use perfectly ripe, firm mangoes.
  • If you prefer less heat, remove all seeds and white pith from the jalapeño.
  • This salsa tastes best when made the day of serving.
  • Richard recalls the sharp tang of lime from a street cart in Mexico when tasting this recipe.
