Create a truly spectacular platter of Loaded Nachos, piling crisp tortilla chips high with savory seasoned meat, plenty of melted cheese, beans, fresh toppings, and all your favorite condiments. This recipe brings back the fun and flavor of big gatherings.

Ingredients

Scale
  • 1 bag (about 13 oz) tortilla chips
  • 1 lb ground beef or shredded chicken
  • 1 packet taco seasoning mix
  • 1 cup water
  • 2 cups shredded Monterey Jack or Cheddar cheese blend
  • 1 (15 oz) can black beans, rinsed and drained
  • 1/2 cup pickled jalapeƱo slices (or more, to taste)
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • Optional toppings: sliced black olives, chopped cilantro, diced tomatoes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using ground beef, cook it in a skillet over medium heat, breaking it up until browned. Drain off any excess fat.
  3. Stir the taco seasoning and water into the cooked meat. Simmer for 5-7 minutes until the sauce thickens slightly. Set aside. (If using pre-cooked shredded chicken, toss it with the seasoning and water and heat through.)
  4. Spread the tortilla chips in a single layer on a large, oven-safe platter or baking sheet.
  5. Evenly distribute the seasoned meat and the rinsed black beans over the chips.
  6. Sprinkle the shredded cheese generously over the meat and beans.
  7. Bake for 8-12 minutes, or until the cheese is completely melted and bubbly.
  8. Remove from the oven. Immediately top the hot nachos with jalapeƱo slices.
  9. Dollop spoonfuls of sour cream and guacamole across the top.
  10. Serve the platter immediately with salsa on the side, or sprinkle with any remaining optional toppings.

Notes

  • Richard says the key to great nachos is layering, not just piling! Make sure you get toppings between the chips.
  • We used lime juice in our seasoned meat to mimic the street-cart flavors we remember from Mexico.
  • If you prefer, you can assemble the nachos in two smaller layers on two separate sheets if your platter is too crowded for even cooking.
