Ingredients

Scale
  • 2 cups cooked, shredded turkey
  • 1 cup shredded cheddar cheese
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 8 (8-inch) flour tortillas
  • 2 tablespoons butter or oil

Instructions

  1. In a bowl, combine the shredded turkey, cheddar cheese, cranberry sauce, red onion, and cilantro. Mix well.
  2. Lay out four tortillas. Spoon about 1/4 of the turkey mixture evenly onto one half of each tortilla.
  3. Fold the other half of the tortilla over the filling to create a half-moon shape.
  4. Heat 1/2 tablespoon of butter or oil in a large skillet or griddle over medium heat.
  5. Carefully place one or two quesadillas in the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted.
  6. Remove from skillet and repeat with the remaining quesadillas, adding more butter or oil as needed.
  7. Cut each quesadilla into wedges and serve warm.

Notes

  • You can add a pinch of cumin or chili powder to the turkey mixture for an extra kick.
  • Serve with sour cream, salsa, or guacamole if desired.
  • Feel free to substitute other cheeses like Monterey Jack or a Mexican blend.
