Ingredients

Scale
  • 2 cups leftover Thanksgiving stuffing
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 slices cooked turkey or ham
  • 2 large eggs, for poaching
  • Hollandaise sauce, for serving
  • Fresh chives, chopped, for garnish

Instructions

  1. In a bowl, mash the leftover stuffing.
  2. Add 1 large egg, milk, flour, baking powder, and salt. Mix until well combined.
  3. Heat your waffle maker according to manufacturer’s instructions.
  4. Pour about 1/2 cup of the stuffing mixture onto the hot waffle maker and cook until golden brown and crispy. Repeat with the remaining mixture.
  5. While the waffles are cooking, prepare your poached eggs.
  6. Warm the turkey or ham slices.
  7. Place a slice of turkey or ham on each stuffing waffle.
  8. Top with a poached egg.
  9. Drizzle generously with hollandaise sauce.
  10. Garnish with fresh chives.

Notes

  • Ensure your stuffing is not too moist before mixing. If it is, you may need to add a little more flour.
  • You can use a skillet to cook these like pancakes if you don’t have a waffle maker.
  • For a vegetarian option, omit the turkey/ham and serve with sautéed mushrooms or spinach.
