Transform your leftover holiday cookies into delightful truffles. This recipe is a wonderful way to reduce waste and create a new, delicious treat that brings back sweet memories.

Ingredients

Scale
  • 3 cups crushed leftover holiday cookies (about 1 pound)
  • 1/2 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (milk, semi-sweet, or dark)
  • 1 tablespoon coconut oil (optional, for smoother melting)

Instructions

  1. Place your leftover cookies in a food processor and pulse until they form fine crumbs. You should have about 3 cups of crumbs.
  2. In a medium bowl, combine the cookie crumbs, softened cream cheese, softened butter, and vanilla extract. Mix until well combined and a dough-like consistency forms.
  3. Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  4. Chill the cookie balls in the refrigerator for at least 30 minutes to firm up.
  5. Melt the chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring between each, or over a double boiler. If using, stir in the coconut oil for a smoother coating.
  6. Dip each chilled cookie ball into the melted chocolate, ensuring it is fully coated. Use a fork or a toothpick to help with dipping.
  7. Place the coated truffles back on the parchment-lined baking sheet.
  8. Let the truffles set completely. You can speed this up by placing them in the refrigerator for about 15-20 minutes.

Notes

  • Feel free to use any type of leftover holiday cookies. The flavor will vary depending on the cookies used.
  • You can add a pinch of salt to the chocolate mixture to enhance the flavor.
  • Decorate the truffles with sprinkles, chopped nuts, or a drizzle of contrasting chocolate before the coating sets.
  • Store the finished truffles in an airtight container in the refrigerator for up to a week.
