This is a simple, high protein lasagna recipe using cottage cheese for a creamy texture. It makes a wonderful family dinner.

Ingredients

Scale
  • 1 pound ground beef or Italian sausage
  • 1 (15 ounce) container cottage cheese, low fat or full fat
  • 1 (15 ounce) container ricotta cheese (optional, for extra creaminess)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24 ounce) jar of your favorite pasta sauce
  • 12 lasagna noodles, cooked according to package directions
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess fat.
  3. In a medium bowl, combine the cottage cheese, optional ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well until everything is evenly incorporated. This is your high protein lasagna filling.
  4. Spread a thin layer of pasta sauce on the bottom of the prepared baking dish.
  5. Arrange four cooked lasagna noodles over the sauce, slightly overlapping if necessary.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one third of the mozzarella cheese over the cottage cheese layer.
  8. Spoon half of the remaining pasta sauce over the mozzarella.
  9. Repeat the layers: four more noodles, the remaining cottage cheese mixture, another third of the mozzarella, and the rest of the sauce.
  10. Top with the final four noodles. Sprinkle the remaining mozzarella cheese over the top layer.
  11. Cover the baking dish tightly with aluminum foil.
  12. Bake for 25 minutes. Remove the foil and bake for an additional 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  13. Let the baked pasta rest for 10 minutes before slicing and serving your comfort food.

Notes

  • If you want a lasagna no ricotta version, simply omit the ricotta and use the full container of cottage cheese.
  • For a budget-friendly meal, use ground turkey instead of beef.
  • You can assemble this entire dish ahead of time and keep it covered in the refrigerator for up to 24 hours before baking. Add 10 minutes to the covered baking time if baking straight from the fridge.
