Make crunchy, low-carb chicken wings coated in parmesan cheese. This recipe uses baking for maximum crispiness without flour.

Ingredients

Scale
  • 2 lbs chicken wings (flats and drumettes)
  • 1/2 cup grated Parmesan cheese (finely grated)
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a wire rack set over a baking sheet.
  2. Pat the chicken wings very dry using paper towels. This step is key for crispiness.
  3. In a medium bowl, mix the grated Parmesan cheese, baking powder, garlic powder, onion powder, salt, and pepper.
  4. Place the dried wings in a large bowl. Drizzle with olive oil and toss to coat lightly.
  5. Add the Parmesan mixture to the wings. Toss until every piece is evenly coated with the dry mixture.
  6. Arrange the coated wings in a single layer on the prepared baking sheet or rack, ensuring they do not touch.
  7. Bake for 20 minutes.
  8. Flip the wings over. Return to the oven and bake for another 15 to 20 minutes, or until the wings are deep golden brown and very crispy.
  9. Remove from the oven and serve immediately.

Notes

  • For extra crispiness, use a wire rack set over the baking sheet so air circulates underneath the wings.
  • If you prefer an air fryer, cook at 380°F (195°C) for 18-20 minutes, shaking the basket halfway through.
  • Do not skip drying the wings; excess moisture prevents the coating from crisping.
