Ingredients
Scale
1 tbsp butter
1 tbsp olive oil
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
10 oz fresh spinach
4 oz cream cheese, cubed
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt to taste
Black pepper to taste
Instructions
Heat the butter and olive oil in a large skillet over medium heat.
Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5 to 7 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Add the spinach to the skillet in batches, stirring until it wilts down completely.
Reduce the heat to low. Add the cubed cream cheese and heavy cream to the skillet. Stir constantly until the cream cheese melts and the sauce thickens slightly.
Stir in the grated Parmesan cheese. Season with salt and pepper to your preference.
Cook for 1 more minute, stirring well to coat all ingredients in the cream sauce. Serve immediately.
Notes
For a richer flavor, use garlic butter instead of plain butter.
If you want to add protein, cook 1 cup of cooked, diced chicken or sausage before adding the mushrooms.
You can substitute half the heavy cream with sour cream for a tangier sauce, but add it at the very end off the heat.
