Make flavorful, low-carb taco boats using hollowed-out zucchini filled with seasoned ground beef, cheese, and baked until bubbly.

Ingredients

Scale
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1/2 cup onion, chopped
  • 2 tablespoons keto taco seasoning
  • 1/4 cup water
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheddar or Monterey Jack cheese, divided
  • 2 tablespoons sour cream
  • 1/4 cup fresh cilantro, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. Cut the zucchini in half lengthwise. Use a spoon to scoop out the flesh, leaving about a 1/4-inch thick shell. Chop the scooped-out zucchini flesh and set aside.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
  4. Add the ground beef (or turkey) to the skillet. Cook, breaking it up with a spoon, until browned. Drain any excess fat.
  5. Stir in the keto taco seasoning and the reserved chopped zucchini flesh. Add the water and simmer for 5 minutes, allowing the liquid to reduce slightly.
  6. Remove the skillet from the heat. Stir in the softened cream cheese, sour cream, and half of the shredded cheese until combined and creamy.
  7. Spoon the taco filling evenly into the hollowed zucchini shells.
  8. Top each boat with the remaining shredded cheese.
  9. Bake for 18 to 22 minutes, or until the zucchini is tender and the cheese is melted and lightly browned.
  10. Garnish with fresh cilantro, if desired, before serving.

Notes

  • If you prefer a smoother filling, you can blend the cream cheese and sour cream before mixing them with the meat.
  • Use pre-made keto taco seasoning or make your own blend of chili powder, cumin, paprika, garlic powder, and onion powder.
  • For extra richness, substitute half of the water with heavy cream when simmering the filling.
