Ingredients
Scale
3 cups cooked, shredded chicken
4 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup shredded cheddar cheese
1/2 cup cooked, crumbled bacon
1/4 cup finely diced fresh jalapenos (remove seeds for less heat)
2 tablespoons finely chopped fresh cilantro
1 tablespoon lime juice
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the softened cream cheese in a large mixing bowl. Beat it with a fork or hand mixer until smooth.
Add the mayonnaise and sour cream to the bowl. Mix until the dressing base is fully combined and creamy.
Stir in the shredded cheddar cheese, crumbled bacon, diced jalapenos, cilantro, lime juice, garlic powder, salt, and pepper into the dressing mixture. Mix well.
Fold in the shredded cooked chicken until everything is evenly coated with the dressing.
Cover the bowl and chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.
Notes
For a lower carb option, serve this salad in lettuce cups or over celery sticks instead of bread.
If you use pre-cooked chicken breasts, shred them while they are still slightly warm for easier mixing.
Adjust the amount of jalapeno based on your preferred level of spice.
