Enjoy Richard’s Italian Stuffed Artichokes, a savory appetizer or side dish filled with a flavorful breadcrumb and Parmesan stuffing. This recipe brings back memories of simple, perfect Italian meals.

Ingredients

Scale
  • 4 large globe artichokes
  • 1 cup dry breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/2 cup water or dry white wine
  • Salt and black pepper to taste

Instructions

  1. Trim the tough outer leaves and stem from each artichoke. Cut off the top quarter inch.
  2. Rub the cut surfaces with lemon juice to prevent browning.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, parsley, salt, and pepper. Stir in the olive oil until the mixture is moist.
  4. Carefully separate the leaves of an artichoke slightly. Stuff the breadcrumb mixture deep between the leaves and into the center cavity. Repeat for all artichokes.
  5. Place the stuffed artichokes in a pot large enough to hold them snugly.
  6. Pour the water or wine around the base of the artichokes.
  7. Cover the pot tightly. Bring the liquid to a simmer over medium heat.
  8. Cook for 40 to 50 minutes, or until the outer leaves pull away easily and the heart is tender when pierced with a fork.
  9. Serve warm.

Notes

  • Richard suggests using fresh, high-quality Parmesan for the best flavor.
  • You can steam the artichokes instead of simmering if you prefer a less wet final product.
  • If you find the stuffing is too dry, add a tiny bit more olive oil.
