Prepare tender, flavorful Korean-style beef quickly using your Instant Pot, served over rice for a complete weeknight meal.

Ingredients

Scale
  • 1.5 lbs ground beef
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 4 cloves garlic, minced
  • 1/2 cup water or beef broth
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for slurry)
  • Cooked white or brown rice, for serving
  • Optional toppings: Sliced green onions, sesame seeds

Instructions

  1. In the Instant Pot inner pot, combine the ground beef, soy sauce, brown sugar, sesame oil, rice vinegar, ginger, garlic, and 1/2 cup water or broth. Stir well to mix the ingredients.
  2. Secure the lid on the Instant Pot and set the vent to the sealing position.
  3. Select the Manual or Pressure Cook setting and cook on High Pressure for 5 minutes.
  4. Allow for a Natural Pressure Release (NPR) for 5 minutes, then carefully switch the valve to the venting position to release any remaining pressure (Quick Release).
  5. Open the lid. In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water to create a slurry.
  6. Turn the Instant Pot to the Sauté function (or remove the inner pot and place it on a burner). Stir the cornstarch slurry into the beef mixture.
  7. Let the mixture simmer while stirring until the sauce thickens, about 1 to 2 minutes.
  8. Serve the Korean beef mixture immediately over bowls of cooked rice. Garnish with green onions and sesame seeds if desired.

Notes

  • For a richer flavor, you can marinate the beef mixture for 30 minutes before pressure cooking, though this is optional for a fast meal.
  • If you prefer a less sweet sauce, reduce the brown sugar to 3 tablespoons.
  • If you cook rice separately in the Instant Pot, use a 1:1 water-to-rice ratio and cook on High Pressure for 4 minutes with a 10-minute Natural Release.
