Make rich, creamy mushroom risotto quickly and easily using your Instant Pot. This recipe requires minimal stirring and delivers classic Italian flavor.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 pound mixed mushrooms, sliced
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine (optional)
  • 4 cups vegetable broth, warm
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons unsalted butter, cold

Instructions

  1. Set the Instant Pot to the Sauté function. Add olive oil and 1 tablespoon of butter. When the butter melts, add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 to 7 minutes. Remove mushrooms and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the Arborio rice to the pot and stir constantly for 2 minutes to toast the grains.
  4. If using wine, pour it in and stir until it is fully absorbed.
  5. Pour in the warm vegetable broth, salt, and pepper. Stir everything together well. Secure the lid and set the vent to Sealing.
  6. Cook on Manual/Pressure Cook setting on High Pressure for 6 minutes.
  7. When the cooking cycle finishes, allow the pressure to naturally release for 10 minutes, then carefully quick release any remaining pressure.
  8. Open the lid. Stir in the reserved cooked mushrooms, the 1/2 cup of grated Parmesan cheese, and the 2 tablespoons of cold butter. Stir vigorously for 1 to 2 minutes until the risotto is smooth and creamy.
  9. Serve immediately topped with extra Parmesan cheese.

Notes

  • Use warm broth to prevent cooling down the pot contents before pressurizing.
  • Do not skip the final stirring step (the ‘mantecatura’) with cold butter and cheese; this creates the signature creaminess.
  • If the risotto seems too thick after the final stir, add a splash more warm broth until you reach your desired consistency.
