Make a rich and creamy chicken and orzo dish quickly using your Instant Pot. This one-pot meal is simple for weeknight dinners.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 cup orzo pasta, uncooked
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Set your Instant Pot to the Sauté function. Add olive oil. When hot, add chicken pieces, salt, pepper, and garlic powder. Cook until lightly browned, about 3 minutes. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 2 minutes. Add minced garlic and cook for 30 seconds more until fragrant.
  3. Stir in the uncooked orzo and chicken broth. Scrape the bottom of the pot to remove any browned bits.
  4. Place the browned chicken back into the pot. Do not stir after adding the chicken and orzo.
  5. Secure the lid and set the vent to Sealing. Cook on Manual/Pressure Cook setting on High for 5 minutes.
  6. When cooking is complete, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully switch the valve to Venting for a Quick Release (QR) of any remaining pressure.
  7. Open the lid. Stir in the heavy cream and Parmesan cheese until the mixture is creamy. Let it sit for 2 minutes to thicken slightly.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • To prevent the orzo from sticking or scorching, make sure you scrape the bottom of the pot well before sealing the lid.
  • If the sauce seems too thick after the pressure release, add a splash more chicken broth or cream until you reach your desired consistency.
  • You can substitute shredded rotisserie chicken for the raw chicken breasts; add it in step 6 along with the cream and cheese.
