Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 yellow onion, quartered
  • 1 (2-inch) piece ginger, sliced
  • 4 star anise
  • 1 cinnamon stick
  • 6 whole cloves
  • 1 tsp coriander seeds
  • 1 tsp black peppercorns
  • 8 cups low-sodium chicken broth
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1/2 tsp salt, or to taste
  • 8 oz dried pho noodles
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh basil leaves
  • 1/2 cup thinly sliced red onion
  • 1 lime, cut into wedges
  • Bean sprouts, for serving

Instructions

  1. Heat olive oil in the Instant Pot on the Sauté setting. Add chicken and brown lightly on all sides. Remove chicken and set aside.
  2. Add the quartered onion, sliced ginger, star anise, cinnamon stick, cloves, coriander seeds, and black peppercorns to the Instant Pot. Sauté for 1-2 minutes until fragrant.
  3. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  4. Return the browned chicken to the pot. Add fish sauce, sugar, and salt.
  5. Secure the lid and set the valve to sealing. Cook on High Pressure for 10 minutes.
  6. Once the cooking time is complete, perform a Quick Release of the pressure.
  7. Carefully remove the lid. Remove the chicken and shred it.
  8. Strain the broth through a fine-mesh sieve into a clean pot or bowl, discarding the solids. Return the shredded chicken to the broth. Keep warm.
  9. Cook the pho noodles according to package directions. Drain well.
  10. To serve, divide the cooked noodles among bowls. Ladle the hot broth and chicken over the noodles.
  11. Garnish with fresh cilantro, basil, sliced red onion, and serve with lime wedges and bean sprouts on the side.

Notes

  • For a deeper flavor, you can char the onion and ginger under the broiler before adding them to the pot.
  • Adjust the fish sauce, sugar, and salt to your preference.
  • Feel free to add other desired toppings like sliced jalapeños or hoisin sauce.
