Ingredients

Scale
  • 1.5 lbs beef sirloin, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried dill
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cups beef broth
  • 1/2 cup sour cream
  • 2 tbsp all-purpose flour
  • 8 oz egg noodles

Instructions

  1. Season beef with salt and pepper.
  2. Add olive oil to the Instant Pot and set to Sauté. Brown the beef in batches. Remove beef and set aside.
  3. Add onion and mushrooms to the pot and cook until softened. Add garlic and cook for 1 minute more.
  4. Stir in dill, salt, and pepper. Return beef to the pot.
  5. Pour in beef broth. Secure the lid and set to Manual High Pressure for 10 minutes.
  6. Once cooking is complete, allow a natural pressure release for 5 minutes, then perform a quick release.
  7. In a small bowl, whisk together sour cream and flour until smooth. Stir this mixture into the stroganoff.
  8. Add egg noodles to the pot. Stir to combine. Secure the lid and cook on Manual High Pressure for 3 minutes.
  9. Perform a quick pressure release. Stir well before serving.

Notes

  • For a richer flavor, you can use a mix of beef broth and water.
  • Adjust the amount of sour cream to your preference.
  • If the sauce is too thin, you can thicken it with a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water).
