These Honey Mustard Chicken Thighs deliver a wonderfully tangy glaze that caramelizes beautifully on the skin. Richard remembers a similar sweet-sharp glaze from a roadside stop on one of our early travels. Follow these steps to bring that memorable flavor right into your kitchen.

Ingredients

Scale
  • 4 Bone-in, skin-on chicken thighs
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs completely dry with paper towels. This step helps the skin crisp.
  3. In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, garlic powder, salt, and pepper to create the glaze.
  4. Place the chicken thighs skin-side up in a baking dish.
  5. Brush about half of the glaze mixture evenly over the chicken thighs, coating the skin well.
  6. Bake for 25 minutes.
  7. Remove the dish from the oven. Brush the remaining glaze over the chicken.
  8. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is deeply caramelized.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • Drying the skin thoroughly before glazing is key for achieving crisp skin.
  • You can baste the chicken every 5-7 minutes during the final 10 minutes for extra caramelization, watching closely to prevent burning.
  • This glaze pairs well with roasted root vegetables or a simple green salad.
