- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/4 cup honey
- 1/4 cup lime juice
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1 head butter lettuce, leaves separated
- Optional toppings: chopped peanuts, sriracha
- In a small bowl, whisk together honey, lime juice, soy sauce, ginger, and garlic.
- Add chicken pieces to the bowl and toss to coat. Let marinate for at least 15 minutes.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced red bell pepper to the skillet and cook for another 2-3 minutes until slightly tender.
- Stir in the green onions and cilantro.
- Spoon the chicken mixture into the prepared lettuce cups.
- Add any optional toppings you like.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
- If you don’t have butter lettuce, romaine or iceberg lettuce also work well.
- This recipe can be made ahead of time; store the chicken mixture separately from the lettuce cups.
