Ingredients
Scale
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
Salt and black pepper to taste
1/2 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
2 tablespoons apple cider vinegar
1 teaspoon fresh ginger, grated
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Pat the chicken thighs completely dry with paper towels. This helps the skin crisp. Season both sides generously with salt and pepper.
Heat the olive oil in a large, oven-safe skillet over medium-high heat.
Sear the chicken thighs, skin-side down, for 5 to 7 minutes until the skin is golden brown and crisp.
Flip the chicken thighs.
While the chicken sears, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, and grated ginger in a small bowl to create the glaze.
Pour half of the glaze mixture over the chicken in the skillet. Reserve the other half for later.
Transfer the skillet to the preheated oven. Bake for 20 minutes.
Remove the skillet from the oven. Brush the tops of the chicken with the remaining reserved glaze.
Return the chicken to the oven and bake for another 5 to 10 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the glaze is thick and sticky.
Let the chicken rest for 5 minutes before serving.
Notes
Drying the skin well before searing is key for crispy skin.
Do not skip searing; it builds essential flavor.
Use the reserved glaze only for basting in the last stage to prevent the initial sugars from burning.
