You can make a rich, creamy, restaurant-quality Alfredo sauce from scratch in just 10 minutes. This simple recipe uses only a few core ingredients and tastes far better than anything from a jar.

Ingredients

Scale
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste

Instructions

  1. Melt the butter in a medium saucepan over medium heat. You want the butter fully melted but not browned.
  2. Add the minced garlic to the melted butter. Cook for about 30 seconds until you can smell the garlic. Do not let the garlic burn.
  3. Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring often. Reduce the heat to low once simmering begins.
  4. Gradually whisk in the grated Parmesan cheese, a little at a time, allowing it to melt and incorporate fully before adding more. Keep stirring until the sauce is smooth and thick enough to coat the back of a spoon. This is your rich creamy sauce base.
  5. Remove the pan from the heat. Stir in the salt and pepper. Taste the sauce and adjust seasonings if needed.
  6. Toss immediately with your favorite cooked pasta, like fettuccine, or use this simple pasta topping as desired. Serve hot with extra Parmesan cheese.

Notes

  • For the best texture, always use freshly grated Parmesan cheese. Pre-shredded cheese contains anti-caking agents that can make your sauce grainy.
  • If the sauce gets too thick while serving, whisk in a tablespoon or two of the reserved pasta cooking water to thin it slightly.
  • This recipe is the foundation for a classic Garlic Parmesan Sauce. For a variation, try adding a pinch of nutmeg for depth.
