A quick and simple breakfast wrap using egg whites, spinach, and feta cheese for a high-protein start to your day.

Ingredients

Scale
  • 1 cup liquid egg whites
  • 1/4 cup chopped fresh spinach
  • 2 tablespoons crumbled feta cheese
  • 1 teaspoon olive oil
  • 1 whole wheat or low-carb tortilla
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Pour the liquid egg whites into the skillet.
  3. As the edges begin to set, sprinkle the chopped spinach and feta cheese evenly over the top.
  4. Cook until the egg whites are fully set, about 3 to 4 minutes.
  5. Season with salt and pepper.
  6. Carefully slide the cooked egg mixture onto a plate.
  7. Place the tortilla on a clean surface. Place the egg mixture onto the center of the tortilla.
  8. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap.
  9. Slice in half and serve immediately.

Notes

  • For make-ahead meals, cook the egg mixture, let it cool, and store it in the refrigerator for up to three days. Assemble the wrap just before eating.
  • You can substitute spinach with diced bell peppers or mushrooms for flavor variation.
  • Warm the tortilla briefly in the microwave or a dry pan before filling to make rolling easier.
