Ingredients
Scale
1 cup rolled oats
1/2 cup protein powder (vanilla or unflavored)
1/4 cup chia seeds
1 teaspoon baking powder
1/2 teaspoon cinnamon
Pinch of salt
1 cup milk (dairy or non-dairy)
1/2 cup unsweetened applesauce or mashed banana
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Grease a 6-cup muffin tin well.
In a large bowl, mix the dry ingredients: oats, protein powder, chia seeds, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the wet ingredients: milk, applesauce, egg, and vanilla extract.
Pour the wet mixture into the dry mixture. Stir until just combined. Do not overmix.
Divide the batter evenly among the 6 muffin cups.
Bake for 18 to 22 minutes, or until the tops are set and lightly golden.
Let the cups cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Store cooled cups in an airtight container in the refrigerator for up to 5 days.
Notes
For reheating, microwave one cup for 30 to 45 seconds until warm.
Feel free to add mix-ins like berries or chopped nuts before baking.
If you prefer a sweeter cup, add 1-2 tablespoons of maple syrup to the wet ingredients.
