Ingredients
Scale
1 pound elbow macaroni
1 cup skim milk
1 cup low-fat cottage cheese, blended smooth
4 ounces sharp cheddar cheese, shredded
4 ounces Gruyère cheese, shredded
2 tablespoons all-purpose flour
2 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg
Instructions
Cook macaroni according to package directions until al dente. Drain well and set aside.
In a medium saucepan, melt the butter over medium heat.
Whisk in the flour and cook for one minute, stirring constantly.
Gradually whisk in the milk until smooth. Heat until the mixture thickens slightly.
Stir in the blended cottage cheese, salt, pepper, and nutmeg. Heat through, but do not boil.
Remove the pan from the heat.
Add the shredded cheddar and Gruyère cheeses to the sauce, stirring until completely melted and smooth.
Add the drained macaroni to the cheese sauce and stir gently to coat every piece.
Serve immediately and enjoy this rich, comforting dish.
Notes
To blend the cottage cheese smoothly, use an immersion blender or food processor until completely creamy.
For an extra cheesy flavor, you can add a tablespoon of nutritional yeast.
This recipe tastes best served right away when the sauce is at its peak.
