4 large eggs
1/4 cup milk or water
Salt and pepper to taste
1 teaspoon olive oil
1/2 cup cooked, crumbled turkey sausage or black beans
1/4 cup shredded cheddar cheese
2 large whole wheat tortillas
1/4 cup salsa (optional)
2 tablespoons plain Greek yogurt (optional)
Instructions
Whisk eggs, milk or water, salt, and pepper in a bowl.
Heat olive oil in a non-stick skillet over medium heat.
Pour in the egg mixture and cook, stirring gently, until scrambled and just set.
Stir in the cooked sausage or beans and cheese. Remove from heat.
Warm the tortillas briefly in a dry skillet or microwave to make them pliable.
Place half the egg mixture onto the lower third of one warm tortilla.
If using, top with a spoonful of salsa and Greek yogurt.
Fold the sides of the tortilla inward over the filling.
Tightly roll the bottom edge up and over the filling, continuing to roll until you have a compact burrito.
Repeat with the remaining ingredients and the second tortilla.
Serve immediately and enjoy your filling breakfast!
Notes
You can substitute scrambled tofu for eggs to make this recipe vegan.
Using beans increases the fiber content of your breakfast.
Tightly rolling the burrito prevents the filling from falling out while you eat.
Warm tortillas are key to preventing tearing during the wrapping process.
