Enjoy these High Protein Blueberry Muffins! They deliver a moist crumb and satisfy your craving for a healthy, flavorful breakfast or snack. We adapted this recipe to keep the texture soft while boosting the protein content.

Ingredients

Scale
  • 1 3/4 cups All-Purpose Flour
  • 1/2 cup Vanilla Protein Powder (whey or plant-based)
  • 1/2 cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Milk (dairy or non-dairy)
  • 1/4 cup Unsweetened Applesauce
  • 1/4 cup Melted Coconut Oil or Vegetable Oil
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Fresh or Frozen Blueberries

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a standard 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
  3. In a separate medium bowl, combine the milk, applesauce, oil, egg, and vanilla extract. Mix until just combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten and results in tough muffins.
  5. Gently fold in the blueberries. If using frozen blueberries, do not thaw them first.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!

Notes

  • Richard recalls a faint almond note in a memorable European pastry; feel free to add 1/4 teaspoon of almond extract along with the vanilla for a subtle depth of flavor.
  • For an extra moist crumb, ensure your oil is measured correctly.
  • If you prefer a less sweet muffin, reduce the sugar to 1/3 cup.
