Ingredients
Scale
1.5 lbs boneless, skinless chicken thighs
1/4 cup harissa paste
3 tablespoons honey
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
For serving (optional): Cooked rice or quinoa, fresh cilantro, yogurt sauce
Instructions
In a medium bowl, whisk together the harissa paste, honey, olive oil, lemon juice, cumin, salt, and pepper to make the marinade.
Place the chicken thighs in a resealable bag or shallow dish. Pour half of the marinade over the chicken, ensuring it is fully coated. Reserve the remaining half for basting or serving.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
Arrange the marinated chicken thighs in a single layer on the prepared baking sheet.
Bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
For the last 5 minutes of cooking, brush the chicken with some of the reserved marinade.
Remove the chicken from the oven and let it rest for 5 minutes before slicing or serving.
Serve over rice or quinoa, topped with fresh cilantro and a drizzle of yogurt sauce, if desired.
Notes
For a grilled version, cook over medium heat for 5-7 minutes per side until done. Baste with reserved marinade during the last few minutes of grilling.
To make a quick yogurt sauce, mix 1/2 cup plain Greek yogurt with 1 tablespoon lemon juice and a pinch of salt.
Chicken breasts can substitute for thighs, but reduce the baking time slightly to prevent drying.
