A vibrant and flavorful roasted carrot hummus infused with the smoky heat of harissa for a delightful spicy dip.

Ingredients

Scale
  • 2 pounds carrots, peeled and chopped
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons harissa paste (or to taste)
  • 2-4 tablespoons water, as needed
  • Fresh cilantro, chopped, for garnish (optional)
  • Pita bread or vegetables for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the chopped carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes, or until the carrots are tender and slightly caramelized.
  4. Let the roasted carrots cool slightly, then transfer them to a food processor.
  5. Add the rinsed chickpeas, tahini, lemon juice, minced garlic, and harissa paste to the food processor.
  6. Process until smooth, scraping down the sides as needed.
  7. Add water, one tablespoon at a time, until the hummus reaches your desired consistency.
  8. Taste and adjust seasoning, adding more harissa or lemon juice if desired.
  9. Serve the harissa carrot hummus chilled or at room temperature.
  10. Garnish with fresh cilantro if using.
  11. Enjoy with pita bread or your favorite vegetables.

Notes

  • For a milder spice, start with less harissa paste and add more to your preference.
  • If you don’t have harissa paste, you can use a blend of chili powder and smoked paprika for a similar smoky heat.
  • Tahini is essential for the classic hummus flavor and creamy texture.
  • Ensure your carrots are fully roasted to bring out their natural sweetness.
