This Guinness Beef Stew recipe, crafted by Richard and Eleanor, brings back a cherished memory of rich, slow-cooked comfort. We use Guinness stout to give the beef and vegetables a deep, malty flavor. It cooks perfectly in your slow cooker, resulting in incredibly tender meat and a savory broth. It is the ultimate hearty meal for a chilly evening.

Ingredients

Scale
  • 2 pounds beef chuck, cut into 1 1/2-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and thickly sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon all-purpose flour
  • 1 (14.9 ounce) bottle Guinness stout
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound potatoes, peeled and cubed

Instructions

  1. Season the beef cubes with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches; do not crowd the pan. Remove the browned beef and set it aside.
  3. Add onion, carrots, and celery to the skillet. Cook until softened, about 5 minutes.
  4. Stir in the garlic and cook for 1 minute more until fragrant.
  5. Stir in the tomato paste and flour, cooking for 1 minute.
  6. Pour in the Guinness stout, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  7. Transfer the beef, the skillet mixture, beef broth, thyme, and bay leaf to your slow cooker.
  8. Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours.
  9. Add the cubed potatoes during the last 1.5 hours of cooking.
  10. Remove the bay leaf before serving. Taste and adjust seasoning if needed.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
  • Richard suggests serving this with crusty bread for dipping.
  • You can use a different dark beer if Guinness is unavailable, but the flavor will change slightly.
