Ingredients
Scale
1 head romaine lettuce, chopped
4 oz sliced salami, chopped
4 oz sliced pepperoni, chopped
4 oz sliced provolone cheese, chopped
1/2 cup sliced black olives
1/2 cup sliced banana peppers
1/4 cup thinly sliced red onion
1/2 cup cherry tomatoes, halved
For the Dressing: 1/2 cup mayonnaise
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and black pepper to taste
Instructions
Prepare the dressing: In a small bowl, whisk together the mayonnaise, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper until smooth. Set aside.
Prepare the salad components: Chop the romaine lettuce, salami, pepperoni, and provolone cheese into bite-sized pieces.
Combine the salad ingredients: In a large bowl, mix the chopped lettuce, meats, cheese, olives, banana peppers, red onion, and tomatoes.
Dress the salad: Pour the dressing over the salad mixture. Toss gently until all ingredients are lightly coated.
Serve immediately or chill for 30 minutes to allow flavors to meld before serving.
Notes
For a keto grinder salad, confirm all processed meats and cheese have no added sugar.
You can substitute Italian deli ham or mortadella for some of the salami or pepperoni.
This salad works well for meal prep; store the dressing separately and combine just before eating.
