Ingredients

Scale
  • 1.5 pounds skirt steak, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • Flour tortillas, for serving
  • Optional toppings: salsa, guacamole, sour cream, shredded cheese, lime wedges

Instructions

  1. In a bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Add the sliced steak and toss to coat. Let it marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
  2. Preheat your grill to medium-high heat.
  3. Thread the marinated steak and sliced vegetables onto skewers, if desired, or grill them directly on the grates.
  4. Grill the steak for 2-3 minutes per side, or until cooked to your desired doneness. Grill the vegetables until tender-crisp and slightly charred.
  5. Warm the tortillas on the grill or in a separate pan.
  6. Serve the grilled steak and vegetables immediately with warm tortillas and your favorite toppings.

Notes

  • For extra flavor, marinate the steak overnight in the refrigerator.
  • If you don’t have a grill, you can cook the steak and vegetables in a hot skillet on the stovetop.
  • Adjust the cayenne pepper to control the spice level.
