Celebrate St. Patrick’s Day with these vibrant Green Velvet Shamrock Cupcakes. They’re a fun and festive treat that brings a touch of Irish cheer to any gathering.

Ingredients

Scale
  • 1 box (18.25 oz) white cake mix
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1/4 cup vegetable shortening
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Red food coloring
  • Black food coloring
  • White nonpareils or sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with green cupcake liners.
  2. In a large bowl, combine the white cake mix, 1 cup milk, 1/2 cup vegetable oil, 3 eggs, and 1 teaspoon vanilla extract. Beat on medium speed for 2 minutes until well combined.
  3. Add green food coloring to the batter until you achieve a vibrant green color.
  4. Fill each cupcake liner about two-thirds full with the green batter.
  5. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  6. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  7. To make the frosting, beat the softened butter and shortening in a large bowl until smooth.
  8. Gradually add the powdered sugar, alternating with the 1/4 cup milk, beating until smooth and creamy.
  9. Stir in 1 teaspoon vanilla extract.
  10. Divide the frosting into separate bowls. Tint one bowl with a small amount of red food coloring for the red part of the shamrock. Tint another bowl with black food coloring for the outline. Leave the remaining frosting white or tint it a very light green.
  11. Once the cupcakes are completely cool, frost them. You can use a piping bag with a round tip to create the shamrock shape. Pipe three green circles for the leaves of the shamrock. Then, pipe a small amount of red frosting in the center, and use black frosting to outline the shamrock shape and add a stem.
  12. Decorate with white nonpareils or sprinkles.

Notes

  • For an extra festive touch, you can add a drop of black food coloring to a portion of the green batter to create a darker green for contrast.
  • Ensure your butter and shortening are at room temperature for the smoothest frosting.
  • If you don’t have piping bags, you can use zip-top bags with the corner snipped off.
