Make crispy, sweet gluten-free waffle sticks coated in cinnamon sugar. This recipe is simple and yields a tender interior perfect for snacking.

Ingredients

Scale
  • 1 1/2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/4 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/4 cup melted unsalted butter or oil
  • 1 teaspoon vanilla extract
  • For Coating: 1/2 cup granulated sugar
  • For Coating: 2 teaspoons ground cinnamon
  • For Coating: 4 tablespoons unsalted butter, melted

Instructions

  1. Prepare your waffle iron according to the manufacturer’s directions. If you have a waffle stick maker, use that; otherwise, use a standard waffle iron and plan to cut the waffles into sticks later.
  2. In a large bowl, whisk together the gluten-free flour blend, 2 tablespoons sugar, baking powder, salt, and 1 teaspoon cinnamon.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few small lumps are acceptable.
  5. Cook the batter in the preheated waffle iron until golden brown and cooked through. If using a standard iron, cook until crisp.
  6. While the waffles cook, prepare the coating. In a shallow dish, mix the 1/2 cup sugar and 2 teaspoons cinnamon for the coating.
  7. As soon as a waffle is done, brush both sides generously with the 4 tablespoons of melted butter.
  8. Immediately press the buttered waffle into the cinnamon sugar mixture, coating both sides completely.
  9. If you made standard waffles, cut them into sticks while still warm. If you used a waffle stick maker, remove the sticks.
  10. Serve the gluten-free cinnamon sugar waffle sticks immediately for the best texture.

Notes

  • For extra crispy sticks, cook the waffles slightly longer than usual until they are deep golden brown.
  • If your gluten-free flour blend does not contain xanthan gum, add 1/2 teaspoon to the dry ingredients.
  • You can dip these sticks in melted chocolate or cream cheese frosting for an added treat.
