Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Vanilla Syrup:
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, cloves, nutmeg, and salt.
  2. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay.
  4. For the vanilla syrup: In a small saucepan, combine 1 cup of sugar and 1/2 cup of water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat and stir in 1 teaspoon of vanilla extract.
  5. Heat a lightly oiled griddle or frying pan over medium-high heat.
  6. Pour about 1/4 cup of batter for each pancake onto the hot griddle.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. Serve the gingerbread pancakes warm with the prepared vanilla syrup.

Notes

  • For extra festive flair, you can add a pinch of black food coloring to the batter to achieve a darker gingerbread color.
  • Ensure your baking powder is fresh for the fluffiest pancakes.
  • The vanilla syrup can be made ahead of time and stored in an airtight container at room temperature.
