Prepare a simple, flavorful weeknight dinner using this one-pan recipe for tender chicken and golden potatoes coated in garlic and Parmesan cheese.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1.5 lbs baby potatoes, halved or quartered
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 0.5 teaspoon black pepper, divided
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 0.5 cup grated Parmesan cheese, divided
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, half of the salt, and half of the pepper. Spread the potatoes in a single layer on the prepared baking sheet.
  3. Roast the potatoes for 15 minutes to give them a head start.
  4. While the potatoes roast, place the chicken pieces in the same bowl. Add the remaining 2 tablespoons of olive oil, the remaining salt, pepper, Italian seasoning, and garlic powder. Toss to coat the chicken evenly.
  5. After the potatoes have roasted for 15 minutes, remove the pan from the oven. Push the potatoes to one side of the pan.
  6. Add the seasoned chicken to the empty side of the baking sheet, spreading it into a single layer.
  7. Return the pan to the oven and bake for another 10 minutes.
  8. Remove the pan again. Sprinkle 3 tablespoons of the Parmesan cheese and the minced garlic over the chicken and potatoes. Gently toss everything on the pan to coat.
  9. Bake for a final 5 to 8 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the potatoes are tender and slightly crispy.
  10. Remove from the oven. Sprinkle with the remaining Parmesan cheese and fresh parsley before serving immediately.

Notes

  • For crispier potatoes, ensure they are cut into uniform, smaller pieces before the initial roast.
  • If you prefer chicken thighs, they may require 2-3 minutes longer cooking time than breasts.
  • You can substitute baby potatoes with cubed Yukon Gold or red potatoes.
