Ingredients
Scale
1 (4-6 pound) prime rib roast
4 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon salt
1 teaspoon black pepper
Instructions
Preheat your oven to 450°F (230°C).
In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
Rub the herb and garlic mixture all over the prime rib roast.
Place the roast, fat side up, in a roasting pan.
Roast at 450°F (230°C) for 15 minutes.
Reduce the oven temperature to 325°F (160°C) and continue roasting for about 15-20 minutes per pound, or until a meat thermometer inserted into the thickest part registers 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 135°F (57°C) for medium.
Remove the roast from the oven, tent it loosely with foil, and let it rest for 15-20 minutes before carving.
Notes
For a more flavorful crust, you can sear the roast on all sides in a hot pan before applying the herb mixture and roasting.
Allowing the roast to rest is crucial for juicy, tender meat.
Adjust cooking time based on your desired level of doneness.
