1.5 lbs sirloin steak, cut into 1 -inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons fresh parsley, chopped (for garnish)
Pat the steak cubes completely dry with paper towels. This step is key for a good sear.
Season the steak cubes evenly with salt and pepper.
Place a large cast-iron skillet over high heat. Add the olive oil and let it get very hot until it shimmers.
Carefully place the steak cubes in the hot pan, ensuring you do not overcrowd the skillet. Work in batches if necessary.
Sear the steak for 1.5 to 2 minutes per side without moving them. You want a deep brown crust to form.
Remove the seared steak from the skillet and set it aside on a clean plate.
Reduce the heat to medium-low. Add the butter to the skillet.
Once the butter melts, add the minced garlic and rosemary. Cook for about 30 seconds until fragrant, stirring constantly. Do not let the garlic burn.
Return the seared steak bites to the skillet. Toss quickly to coat them thoroughly in the garlic butter sauce.
Remove the skillet from the heat immediately.
Garnish with fresh chopped parsley before serving warm.
Notes
Using a cast-iron skillet gives the best sear because it retains heat so well.
Make sure your steak is at room temperature before searing for even cooking.
Do not skip drying the meat; excess moisture creates steam instead of a crust.
