Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup unsalted butter, melted
4 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh parsley, chopped (for garnish)
Wooden or metal skewers
Instructions
If using wooden skewers, soak them in water for at least 30 minutes. This stops them from burning.
In a bowl, whisk together the melted butter, minced garlic, lemon juice, oregano, salt, and pepper. This is your flavorful marinade.
Add the chicken cubes to the marinade. Toss everything gently to coat the chicken completely. Let it sit for 20 minutes. You want flavor, not a long soak.
Thread the marinated chicken pieces onto your prepared skewers. Do not pack them too tightly; leave a little space between each piece for even cooking and browning.
Preheat your grill to medium-high heat. You want a hot surface for that perfect sear.
Place the skewers on the hot grill grates. Grill for about 4-6 minutes per side. Turn them only once or twice.
Cook until the chicken is opaque throughout and shows nice browned marks. You are looking for juicy, golden edges.
Remove the skewers from the grill. Sprinkle with fresh chopped parsley before serving. Enjoy the taste of that memory!
Notes
For extra color, you can alternate chicken pieces with bell pepper or onion chunks on the skewer.
If you do not have a grill, you can cook these skewers in a hot skillet or under the broiler, watching carefully to prevent burning.
Always check that the internal temperature of the chicken reaches 165°F (74°C).
